Fermentation and extraction lasted between 12 and 28 days.\u003c\/p\u003e\n\u003cp\u003eThe 2023 vintage is a blend of 85% Cabernet Sauvignon and 15% Merlot. The wine was aged for 15 month in French barrels, of which 7% were new, before being blended and bottled in October 2024.\u003c\/p\u003e\n\u003cp\u003eDeep crimson in colour, the 2023 ‘Clémentine’ opens with an brooding nose of violet, lifted potpourri, and sea spray, framed by fine, tight-grained oak. Initially reserved, with air it reveals greater depth and expression, though retaining coastal freshness.\u003c\/p\u003e\n\u003cp\u003eThe palate is rich, textured, and full-bodied, carrying a core of blueberry and dark fruits underpinned by mineral acidity.
